Best healthy green smoothie

Just recently I started to incorporate more smoothies into my eating plan. Right now this version of  a green smoothie is my favourite. I drink smoothies instead of having a "normal breakfast", which usually contains carbohidrates (bread). I really wanted to make a difference and start eating better now, than being sorry and miserable at the beggining of summer! A great benefit is also that I don't waste any vegetables or fruit, I just blend them together. I'm thinking of doing a weekly update on my "healthy living plan" (every monday), that would be a good motivation for me and maybe for some of you too.

Lemon Lavender Yogurt Cake

    • 3/4 cup butter, room temperature
    • 1 cup sugar
    • 2 Tablespoons lemon juice
    • Zest of one lemon
    • 2 teaspoons vanilla
    • 1/2 cup Vanilla Yoghurt
    • 3 eggs
    • 1 1/2 cups flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 Tablespoon fresh lavender, finely chopped
  • 1 cup powdered sugar
  • 3 to 4 Tablespoons fresh lemon juice
  • Lavender sprigs
  1. Cream butter and sugar until light and fluffy, about 3 minutes. Add lemon juice, zest, and vanilla. Add yogurt, and add eggs one at a time. Add flour, baking powder, salt, and lavander. Mix for an additional minute, scrapping the bowl, until everything is smooth and combined. Pour batter into a loaf pan that has been coveres with parchment paper
  2. Bake in a preheated 350 degree (180 celsius) oven for 45 to 50 minutes. Cool in pan for 10 minutes. Take the cake out of the pan, and cool completely on a rack.
  3. Make the glaze by whisking powdered sugar and lemon juice. Add more sugar and lemon juice as needed. Drizzle over cake and add lavender sprigs. Let glaze stand until completely set.

Carrot muffins

- 200 g of flour
- 250 g of carrots
- 1 orange
- 2 tea spoons of baking powder
- 1 egg
- 150 g of powdered sugar
- 100 ml of melted butter
- 200 g of cream cheese

Instructions: Mix grated carrots, orange juice, orange peel, an egg, sugar, butter and cream cheese. At the end add flour and bakind powder.  After you've blended everything well, fill the cupacake tray with the dough and bake the muffins for 20 minutes in 180 degrees celsius preheated oven. Enjoy!
The carrot muffins were made by my sister. What can I say, she is just a freak and bakes A LOT!

Oreo spread

My sister made something really deliscious and awesome yesterday. It's a mixture of nutella, oreos and peanut butter. It can be used as a cake filling or just a dip for those who aren't really looking at your daily calorie intake :D
The easiest recipe ever made!
Mix crushed oreos, 1 1/2 cup peanut butter and 1/2 cup of peanut butter and there you go.

Irish coffee with a twist!

Making an irish coffee is a really easy way to spice up your everyday coffee intake. I always try to play around with the ingredients that I put in my coffee. This time I kicked it up a notch with some marshmallows and white chocolate bits. How do you make your coffee?
