Red velvet cheesecake muffins for Valentine's day

- 175 g oreo cookies
- 50 g butter
- 200 g cream cheese
- 200 g mascarpone
- 150 g sugar
- 15 g cream fix
- 2 eggs
- 100 g whipped cream
- red food colour

 1.  Crush Oreos into tiny little pieces and mix them with softened butter, until they form the dough. This recipe makes 8 red velvet muffins, so split the dough into 8 equal pieces. With the prepared dough fill 8 cups on the muffin baking pan and press very firmly press the dough to the bottom (you can help yourself with a same size glass and just use it to press the dough).
2. Preheat the oven to 175¨C.
3. Mix both cream cheeses together, add sugar and cream fix. When the mixture is well blended add eggs and whipped cream. Gently mix everything together. At the end add the food colour (as much as you would like). Cover the oreo dough with the cream mixture adn the muffins are ready to bake.
4. In a preheated oven bake  them for 20 min. Then leave them to cool off for another 45 minutes (don't take them out of the oven before they aren't cool).
5. When the 45 min pass put them in the freezer for another 5 hours, otherwise they can fall apart.
6.Add whipped cream for decoration. You can also make chocolate hearts to put on top of the cream. They can be easily made at home. Just melt the chocolate and evenly distribute it on a baking sheet, leave to cool of and when it starts to solidify cut out the hearts.
