Lemon cake

- 225g butter- 225g sugar- 275g self-raising flour- 2 teaspoons baking powder- 4 eggs- 4 tablespoons milk- finely grated rind of 2 lemonsCooking time: 1. grease your baking tray and line it with baking paper. Set your oven on 160°C. 2. Measure all the ingredients for the traybake  into a large bowl and beat well for about 2 minutes until well blended. It is best if you do it with an electric mixer. Poor the mixture into the prepared tray. 3. Bake the dough for about 35-40 minutes.4. Allow the tray bake to cool in the tray for a few minutes then lift it out and set it on a wire rack. 5. To make the topping mix 175g powdered sugar and juice of 2 lemons and then just poor it evenly over the cake. Cut into squares when cold.
